If you have pre-cooked beans and homemade chicken stock on hand, this soup comes together remarkably quickly, offering a heartwarming meal that’s perfect for chilly evenings.


Ingredients

  • 6 to 8 cups homemade chicken stock (or high-quality store-bought)
  • ½ lb. to 1 lb. escarole, depending on your preference for greens
  • 1 lb. hot Italian sausage, removed from its casing
  • 2 to 3 cups cooked white beans (e.g., cannellini or great northern, or two 15-oz cans, drained and rinsed)
  • Kosher salt and freshly ground black pepper to taste
  • Parmigiano Reggiano, freshly grated, for serving

Instructions

  1. In a large soup pot, gently bring the chicken stock to a simmer over medium heat. If you happen to have a rind from Parmigiano Reggiano or Pecorino cheese, add it to the stock for an extra layer of savory flavor. While the stock heats, prepare the escarole: cut off the core, then immerse the leaves in a large bowl of cold water for at least 5 minutes to clean thoroughly. Scoop the leaves out, place them in a colander to drain, and then roughly chop them. Aim for pieces that are not too small but manageable with a spoon.
  2. Meanwhile, in a separate skillet, brown the hot Italian sausage over medium heat. There’s no need to add extra oil, as the sausage will release its own fat. Cook until it’s mostly browned and crumbled. Once cooked, transfer the sausage to a paper-towel-lined plate to drain any excess fat.
  3. Add 2 cups of the cooked white beans to the simmering stock. Then, add about half a pound of the chopped escarole to the pot, gently pressing it down with a wooden spoon to submerge it into the liquid.
