While the oven warms, it’s time to create the simple yet powerfully flavorful tofu dressing. In a large mixing bowl, whisk together the grapeseed oil, fragrant sesame oil, low-sodium soy sauce (or tamari for a gluten-free option), and Sriracha until all ingredients are thoroughly combined and emulsified. This quick four-ingredient dressing is packed with umami, savory depth, and a pleasant hint of spice. Next, take your thoroughly drained and lightly pressed extra-firm tofu block and carefully cut it into even 1-inch cubes. Add these tofu cubes to the bowl with the prepared dressing. Using a spatula or your hands, gently toss the cubes, ensuring each piece is completely coated on all sides with the savory mixture. Allow the tofu to sit and briefly marinate in the dressing while the oven finishes preheating; even a short soak helps infuse the tofu with maximum flavor.

While the tofu undergoes its first bake, pivot to preparing the kale. Whisk the 3 tablespoons of melted coconut oil into the reserved dressing in the bowl. Coarsely chop the Tuscan kale, making sure to remove and discard any tough, fibrous stems. Now, artfully nestle the dressed kale and coconut mixture around and between the tofu cubes on the same sheet pan, spreading it out as much as possible in a single, relatively even layer. Return the entire pan to the oven and bake for an additional 12 to 15 minutes. It’s crucial to keep a close eye on the pan during this final stage: the kale should wilt considerably, developing beautifully crispy edges and tender centers, while the coconut flakes should turn a vibrant golden brown and release a fragrant, toasted aroma. Once done, remove the pan from the oven. Use a spatula to gently toss all the ingredients together directly on the sheet pan, allowing the flavors to meld and distribute evenly.
