Description
This recipe delivers a quintessential, no-frills bread stuffing: olive oil-toasted bread combined with savory sautéed onions and celery, the signature blend of Bell’s Seasonings, and a generous touch of butter. It is, without a doubt, my favorite component of the Thanksgiving meal each year.
Notes:
- If you’re utilizing my mother’s peasant bread for this stuffing, there’s no need to remove the crust. Approximately 1.5 pounds of bread equates to about 1.5 loaves of peasant bread. If using other crusty bread, it’s recommended to remove the crust.
- Making Ahead, Freezing, and Baking Instructions: This recipe can be prepared up to step 4, where the pan is covered with foil. At this point, you can refrigerate it for up to 24 hours. To Freeze: After transferring the stuffing to the 9×13-inch pan and covering it with foil, place it in the freezer for up to 3 months. To bake from frozen: Preheat your oven to 350°F. Bake the covered stuffing directly from the freezer for 1 hour. Then, increase the oven temperature to 400°F and bake uncovered for an additional 15 to 20 minutes, or until golden brown.
- Bell’s Seasoning is typically available in most grocery stores and is a finely ground blend of rosemary, oregano, sage, ginger, marjoram, thyme, and pepper. If you cannot find it, a combination of these dried herbs, adjusted to your taste, would be a suitable substitute. Alternatively, a smaller quantity of finely chopped fresh thyme, rosemary, sage, and oregano would also yield excellent results.
Ingredients
- 1½ pounds peasant bread or other French/Italian bread, torn into 1– to 2-inch pieces (about 12 cups), see notes above
- ½ cup extra-virgin olive oil, divided
- Kosher salt and freshly cracked black pepper
- 4 tablespoons (½ stick) unsalted butter
- 2 cups finely diced onions (1 to 2 onions)
- 1 cup finely diced celery
- 1 tablespoon Bell’s Seasoning, see notes above
- 1½ cups homemade chicken stock or vegetable stock
- 1 egg
- Softened unsalted butter, for greasing
Instructions
- Preheat your oven to 400°F. In a large bowl, combine the torn bread pieces with ¼ cup of the olive oil, ensuring the bread is well saturated. Season the bread generously with salt and pepper to taste. Spread the seasoned bread in a single layer onto a large sheet pan, reserving the bowl for later. Transfer the pan to the preheated oven and toast for 15 to 20 minutes, or until the bread cubes are golden brown and slightly crispy. Remove from the oven and set aside to cool slightly.
- Meanwhile, in a spacious sauté pan, melt the 4 tablespoons of unsalted butter with the remaining ¼ cup of olive oil over medium heat. Add the finely diced onions and celery to the pan, season with a pinch of salt, and cook for 5 to 10 minutes, stirring occasionally. Continue cooking until the vegetables are soft and just beginning to take on a light golden color.
- Return the toasted bread to the large, reserved bowl. Once the onions and celery are cooked, scrape them from the sauté pan directly over the bread in the bowl. Sprinkle the Bell’s Seasoning evenly over the mixture. Add 1 cup of the chicken or vegetable stock, along with ½ teaspoon of salt and a good amount of freshly cracked black pepper. Toss all the ingredients thoroughly to combine. Taste the mixture and adjust the seasoning as needed, adding more salt or pepper to achieve your desired flavor profile before adding the egg. In a separate small bowl, whisk together the remaining ½ cup of stock with the egg. Pour this liquid mixture into the bread and vegetable mixture and toss gently to ensure everything is well incorporated.
- Lightly grease a 9 × 13-inch baking pan with softened unsalted butter. Evenly spread the stuffing mixture into the prepared pan. Cover the pan securely with aluminum foil (refer to the notes above for instructions on making this recipe in advance or freezing it). Transfer the covered pan to the center rack of your oven and bake for 30 minutes. After 30 minutes, remove the foil and continue baking the stuffing uncovered for another 10 to 15 minutes, or until the top is beautifully golden brown and crispy. Remove the stuffing from the oven and let it rest for at least 10 minutes before serving, allowing the flavors to meld and the stuffing to set.
