Please use the recipe below as a guide, and don’t hesitate to customize it to your taste. If clamato juice is hard to find, a great alternative is using 680 ml of tomato purée or “strained tomatoes” mixed with 320 ml of water. Feel free to add more of your favorite seasonings: I often find myself adding at least 3 tablespoons of fresh lemon juice, along with extra Worcestershire sauce, horseradish, and hot sauce for a bolder flavor. For a tall glass, typically about 2 shots (approximately 3 ounces) of vodka are poured over ice, then topped with the Bloody Mary mix. A generous crack of black pepper and a garnish of those incredible pickled green beans truly complete the drink. You can find an excellent recipe for pickling green beans here.


Ingredients

  • 1 liter clamato (or tomato purée/strained tomatoes mixed with water, see notes above)
  • 1 T. prepared horseradish
  • 2 T. hot sauce
  • 1 T. black pepper
  • 1 T. Worcestershire sauce
  • 1 T. lemon juice
  • Zest of 1 lemon
  • 1 clove garlic
  • ¼ cup pitted green olives, chopped
  • Salt to taste
  • Vodka or Soju, for serving

Instructions

  1. Place all ingredients for the Bloody Mary mix (everything except the vodka) in a blender or food processor. Puree until smooth and well combined.
  2. To serve, fill a glass generously with ice. Add your desired amount of vodka (approximately 2-3 ounces per glass is typical). Fill the remainder of the glass with the freshly prepared Bloody Mary mix.

  • 2 lbs. green beans, trimmed
  • 5½ cups rice wine vinegar, unseasoned
  • ½ small onion, thinly sliced
  • ¼ cup crushed, dried red chiles
  • ⅛ cup coriander seeds
  • 5 cloves garlic, thinly sliced
  • ¾ cup water
  • 4 T. salt
  • 1 oz. whole black peppercorns
  • 6 T. sugar

Instructions

  1. In a large pot, combine all ingredients for the pickling brine (everything except the green beans). Bring the mixture to a rolling boil. Skim any foam that rises to the surface.
  2. Remove the pot from heat and allow the brine mixture to steep for at least 30 minutes. This allows the flavors to fully infuse. After steeping, strain the brine through a fine-mesh sieve, discarding the solids.
  3. Return the strained pickling brine to a boil. Once boiling, blanch the trimmed green beans in the hot brine for approximately 15 seconds. Immediately remove the blanched beans and spread them in a single layer on sheet trays to cool rapidly in the refrigerator. This helps them retain their crispness.
  4. Once the green beans and brine have completely cooled, transfer the green beans to clean jars. Pour the cooled pickling liquid over the beans, ensuring they are fully submerged. Seal the jars and refrigerate. These pickled green beans will keep for up to one month and are best after a few days of pickling.

  • 10 quail eggs
  • ½ pound bulk sausage, raw
  • 2 large eggs, beaten
  • Flour, for dredging
  • Bread crumbs, for dredging
  • Oil for deep frying

Instructions

  1. Gently place the quail eggs in a small pot and cover them with water. Bring the water to a rolling boil and cook for exactly 1 minute. Immediately drain off the hot water and cover the eggs with ice-cold water or ice to stop the cooking process and prevent overcooking.
  2. Once the eggs are cool enough to handle, carefully peel off their delicate shells. Take the raw bulk sausage and divide it into 10 equal pieces. Flatten each piece into a thin patty; these patties should be large enough to fully encase a quail egg but not overly thick.
  3. Prepare your breading station: one shallow dish with flour, one with the beaten eggs, and one with bread crumbs. Roll each peeled quail egg lightly in flour, ensuring it’s evenly coated. Then, carefully wrap each floured egg with a flattened sausage patty, sealing the sausage tightly around the egg. Bread the wrapped eggs by first rolling them in flour again, then dipping them into the beaten eggs, and finally rolling them thoroughly in the bread crumbs until completely coated.
  4. Heat your deep-frying oil to 350ºF (175ºC) in a deep pot or fryer. Carefully place the breaded Scotch quail eggs into the hot oil. Deep fry for approximately 4 minutes, or until the sausage is cooked through and the exterior is golden brown and crispy. Remove with a slotted spoon and drain on paper towels before serving warm.
