Crafted from readily available canned tomatoes, fresh onion, aromatic garlic, and an abundance of vibrant basil, this sauce delivers an incredibly fresh taste in just about 20 minutes. Its versatility is unmatched, serving as the perfect foundation for homemade pizza, rich pasta dishes, comforting lasagna, and so much more. Plus, with a simple tweak, you can effortlessly transform it into a creamy, luscious vodka sauce!

Last month, an unexpected turn of events during Memorial Day weekend led to a delightful culinary discovery. Our eagerly anticipated annual camping trip with my sister’s family was abruptly rerouted due to unexpectedly frigid temperatures and relentless rain. Instead of pitching tents and cooking over a campfire, we found ourselves seeking refuge at her home, where a cozy woodburning oven set the perfect scene for an indoor pizza night.
My brother-in-law, ever the prepared host, had already whipped up a batch of his fantastic homemade pizza dough earlier that morning, chilling it to perfection for our arrival. With the pizza plan solidified, my mind immediately turned to the sauce. Knowing I didn’t have the luxury of time to prepare Ina Garten’s beloved vodka sauce, my usual go-to for pizza, I delved into my mental recipe Rolodex for a faster alternative. That’s when I remembered Marcella Hazan’s “other” tomato sauce – a gem I hadn’t made in years.
Unlike her more famous, minimalist three-ingredient sauce, this recipe calls for sautéed onions, crushed garlic, a splash of white wine, fresh parsley, and a hint of crushed red pepper flakes. The best part? It comes together in a mere 20 minutes of simmering. As I stirred the pot that evening, the aroma filling the kitchen, I was reminded of how incredibly simple yet profoundly fresh-tasting this miraculous sauce truly is!
For our pizzas that night, I made a slight adaptation: I swapped parsley for fresh basil, reduced the olive oil a touch, and, driven by hungry anticipation, shaved off five minutes from the simmering time. The results were spectacular. The pizzas, adorned with this basil-scented sauce, a medley of cheeses and toppings salvaged from the fridge, and my brother-in-law’s homegrown wine cap mushrooms (truly delicious!) and garden greens, were nothing short of fabulous. The ease and incredible flavor of this sauce immediately propelled it to the top of my favorites list.
The true revelation, however, came upon returning home. Again, I found myself pressed for time but craving the rich creaminess of Ina’s vodka sauce. Inspired by the earlier success, I decided to experiment. I substituted vodka for the white wine and, in the final moments, stirred in a generous half cup of heavy cream. The transformation was magical! A luxurious, homemade vodka sauce, ready in a fraction of the time? This was a game-changer. This simple adaptation means you can enjoy the complexity of a classic vodka sauce with minimal effort, making it perfect for busy weeknights or impromptu gatherings.
I am confident that once you try this recipe, it will quickly become a staple in your culinary repertoire. Its adaptability, speed, and vibrant flavor make it an indispensable asset for any home cook looking to elevate their everyday meals without spending hours in the kitchen. Whether you stick to the classic basil tomato sauce or venture into the creamy vodka variation, you’re in for a treat.

- Speed: From pantry to plate in roughly 20-25 minutes, this sauce is a lifesaver on busy weeknights.

Choosing the Right Canned Tomatoes for Superior Flavor
The quality of your canned tomatoes significantly impacts the final taste of your sauce. While this recipe is quick, it doesn’t skimp on flavor, and that starts with good ingredients. Look for whole peeled San Marzano tomatoes, or San Marzano style if true DOP-certified ones are hard to find. These tomatoes are known for their sweet, balanced flavor and tender texture, which break down beautifully into a smooth sauce. Some excellent brands to consider include:
- La Valle
- Mutti
- DiNapoli
- Cento
Investing in a good quality can of tomatoes will truly elevate your sauce from good to extraordinary, ensuring a rich, deep flavor foundation.

Quick Homemade Tomato Sauce: A Step-by-Step Culinary Journey
Creating this delicious sauce is a straightforward process, broken down into simple, manageable steps. Let’s walk through it together, ensuring a perfect batch every time.
Step 1: Assemble Your Ingredients
Begin by gathering all your necessary components. This practice, known as “mise en place,” ensures a smooth and efficient cooking experience, preventing any last-minute scrambling.

You’ll need approximately 2 cups of finely diced onions and about a tablespoon of minced garlic, typically from two cloves. Precision in chopping ensures even cooking and optimal flavor distribution.

Step 2: Sauté Aromatics to Perfection
In a medium pot, heat the olive oil over medium-high heat. Add the diced onions and minced garlic, along with a pinch of kosher salt. Sauté them gently until they become soft and translucent, releasing their sweet and pungent aromas. This step forms the flavorful base of your sauce.

Step 3: Deglaze with White Wine
Once the aromatics are softened, add a pinch of crushed red pepper flakes for a subtle kick, then pour in the white wine. Let it simmer for 2 to 3 minutes, or until the strong alcohol smell dissipates. This deglazing process adds depth and complexity to the sauce, lifting all the delicious browned bits from the bottom of the pot.

Step 4: Introduce the Tomatoes
Carefully add the can of peeled whole San Marzano tomatoes to the pot. Using kitchen scissors, snip the tomatoes directly in the pot into smaller, more manageable pieces. This method is quick, clean, and prevents splashing. Season generously with another pinch of salt, then bring the mixture to a gentle simmer for 15 minutes, allowing the flavors to meld beautifully.

Step 5: Incorporate Fresh Basil
Once the sauce has simmered, add the fresh basil leaves. The heat from the sauce will immediately start to infuse the basil’s fragrant oils, adding a bright, herbaceous note that is characteristic of classic Italian tomato sauce.

Step 6: Purée to Your Desired Consistency
For a smooth sauce, purée the mixture using an immersion blender directly in the pot. Alternatively, carefully transfer the sauce to a standard blender or food processor and blend until silky smooth. Be cautious when blending hot liquids. Taste the sauce and adjust the seasoning with more salt if necessary to bring out all the flavors.

Step 7: Final Taste and Serve
A final taste test is crucial. Adjust the seasoning with salt to your preference. The goal is a perfectly balanced sauce that is bright, savory, and utterly delicious. Your quick homemade tomato sauce is now ready to enjoy!

This recipe yields about a quart of sauce. For convenient storage, I highly recommend using sturdy deli containers; they are perfect for sauces and dressings. At this point, you can freeze the sauce for up to 3 months, ensuring you always have a homemade option ready for any meal.

Transforming into a Creamy Vodka Sauce
As mentioned, one of the most exciting features of this versatile sauce is its easy transformation into a creamy vodka sauce. Here’s how to do it:
After completing step 3 (simmering the wine), in place of adding white wine, pour in 1/2 cup of good quality vodka. Let it simmer for a minute or two to burn off the alcohol, then proceed with adding the tomatoes and simmering as usual. After puréeing the sauce in step 6, stir in 1/2 cup of heavy cream until fully incorporated and heated through. The result is a wonderfully rich, smooth, and slightly tangy vodka sauce that pairs perfectly with penne or rigatoni.

There’s truly a great feeling that comes with having homemade sauce readily available. It’s a small effort that yields tremendous culinary rewards, making everyday meals feel special and gourmet.
