Instructions

  1. Begin by preparing the broccoli: trim off any woody ends from the stalks. Carefully cut the heads away from the stems. Peel the outer layer of the stems and then halve them lengthwise. For the broccoli heads, cut each one in half through the crown, creating two distinct lobes (avoid separating them into individual florets at this stage).
