Note on Swiss Chard: For the best results in this recipe, seek out tender, high-quality Swiss chard. We frequently source beautiful chard from our local CSA and from the Niskayuna Co-op, which proudly carries chard from Hope Valley Farm. Farmers’ markets are, of course, an excellent source for fresh, seasonal produce.

Note on Bread Crumbs: On one occasion, to my dismay, I realized I was out of bread for the crumbs. In a pinch, I successfully used two English muffins, which worked like a charm and added a unique texture. Don’t be afraid to experiment!


Ingredients

  • 1 large bunch Swiss chard, about 12 ounces
  • ½ cup high-quality extra virgin olive oil, divided
  • 1½ cups (2.5 ounces) fresh homemade bread crumbs (see notes above for tips)
  • 1 clove garlic, finely minced (or more, to taste, especially if using small cloves)
  • Fine sea salt to taste
  • Crushed red pepper flakes, optional, for a hint of heat
  • 1 large, juicy lemon
  • ¾ cups (1.5 – 2 ounces) freshly grated Parmesan, Grana Padano, or Pecorino cheese

Instructions

  1. Thoroughly wash and dry the Swiss chard. Carefully remove the tough stems from the leaves; you can save these fibrous stems for another culinary use. Stack a few of the cleaned leaves on top of each other, roll them tightly like a cigar, and then thinly slice the “cigar” into delicate 1/8-inch ribbons. Continue this process until all the chard leaves are finely shredded. Transfer the shredded chard into a large, spacious salad bowl.
  2. In a small, heavy-bottomed skillet, warm ¼ cup of the extra virgin olive oil over medium heat. Once shimmering, add the fresh bread crumbs and cook, stirring frequently, for about 5 minutes, or until they become beautifully crisp and golden brown. Watch them carefully to prevent burning! Stir in the minced garlic, a pinch of sea salt, and the optional crushed red pepper flakes, allowing them to toast for just one more minute until fragrant. Immediately remove the skillet from the heat to prevent overcooking.
  3. Into the bowl of shredded chard, finely zest the lemon, ensuring you capture all its aromatic oils. Halve the zested lemon and squeeze its juice into a separate small mixing bowl. Add a few generous pinches of sea salt to the lemon juice. Slowly whisk in the remaining ¼ cup of olive oil until a well-emulsified dressing forms. Taste and adjust seasoning as needed.
  4. Add the freshly grated Parmesan cheese and approximately ⅔ of the prepared lemon dressing to the bowl containing the chard.
