For a different, perhaps more balanced, panna cotta, she recommends this vanilla bean buttermilk panna cotta recipe, which she describes as “just about perfect.” However, this simpler recipe remains a fantastic option for a quick, easy, and satisfying dessert, especially if you enjoy a touch more sweetness.


Ingredients

If you have 1½ cups buttermilk on hand:

  • 1½ tsp. unflavored gelatin
  • ½ cup milk, not skim, but 1% and up
  • ½ cup sugar
  • 1½ cups buttermilk
  • ¼ tsp. vanilla extract

If you have 1 cup buttermilk on hand:

  • 1 tsp. gelatin
  • 6 T. milk
  • 6 T. sugar
  • 1 cup buttermilk
  • 1/8 tsp. vanilla

Instructions

  1. In a small bowl, sprinkle the gelatin over ¼ cup (or 3 tablespoons if using 1 cup of buttermilk) of cold water. Let stand until softened, about 5 minutes. This process is called “blooming” the gelatin and is crucial for a smooth texture.
  2. In a medium saucepan, combine the milk and sugar. Heat over medium heat, stirring occasionally, until the sugar completely dissolves and the mixture is hot, but crucially, do not let it boil. This typically takes 3-5 minutes. Remove the saucepan from the heat. Stir in the bloomed gelatin mixture until it is fully dissolved. Then, gently whisk in the buttermilk and vanilla extract until well combined.
  3. Carefully pour the panna cotta mixture into your chosen serving vessels. These can be 4 or 6-oz ramekins, decorative glasses, or even small mason jars.
