- 1 cup raisins (optional – I omit)
- Vanilla ice cream, for serving (optional)
*I’ve used a mix of Fuji, York, and Cameo with great success — feel free to use whatever apple varieties you have on hand or prefer for baking.
Instructions
- Preheat your oven to 350ºF (175ºC). Generously butter and flour a 9-inch tube pan, ensuring all surfaces are lightly coated to prevent sticking.
- In a stand mixer fitted with a paddle attachment, or using a large bowl and a hand mixer, beat the vegetable oil and granulated sugar together until well combined and light. Continue to beat for about 5 minutes, then add the eggs one at a time, mixing well after each addition, until the mixture is creamy and smooth.
- In a separate medium bowl, sift together the 3 cups of flour, kosher salt, ground cinnamon, and baking soda. Gradually add these dry ingredients to the wet batter, mixing on low speed until just combined. Be careful not to overmix.
- Stir in the vanilla extract, then gently fold in the sliced apples, and if using, the chopped walnuts and raisins. Mix until all ingredients are evenly distributed throughout the batter.
