I haven’t gone apple picking yet this fall, but last weekend I bought a half bushel more than I needed from my favorite local spot, Riverview Orchards — both for eating and for their apple cider donuts, which I think are the best around.

I started by baking Teddie’s Apple Cake, an old family favorite, and I plan to make a big batch of homemade applesauce and then an applesauce bundt cake with that sauce. Below are more apple recipes to try this season.

Homemade Applesauce — simple, quick, and rewarding. Simmer apples with the skins on for the best color; deeply red varieties like Empire produce a beautifully hued sauce.

Description

Homemade applesauce is quick and rewarding. It requires no peeling, no added sugar, and no spices for a naturally bright, fresh result.

Apples: Any variety works. Fuji and Pink Lady are great if you can find them at the market; Empire apples give a lovely red color.

You’ll get the smoothest results using a food mill to strain the cooked apples.


Ingredients

  • 3 lbs. apples — about 8 to 10 apples (see notes above)
  • 1 cup water

Instructions

  1. Cut apples into large chunks by slicing around the core and discarding it. Place apple pieces in a large pot with about 1 cup of water. Cover, bring to a boil, then reduce heat to medium or medium-low and simmer until the apples are very tender, about 20 minutes. Time varies by apple variety and how full the pot is.
  2. Spoon the tender apples into a food mill in small batches and press to remove skins and seeds, adjusting how much of the cooking liquid you use as needed. That’s it — enjoy the applesauce warm or chilled.
