My preferred combination includes hearty oats, unsweetened coconut, sliced almonds, and a generous amount of millet, yielding a perfectly balanced texture and flavor. I often enjoy this muesli without any dried fruit or puffed cereal additions, finding it absolutely delicious on its own or served with fresh fruit. If you enjoy dried fruit, feel free to add it, but know that the toasted muesli is fantastic either way. Similarly, if you’re uncertain about puffed cereal, taste the muesli first before adding. I once purchased a very large bag of puffed millet, which won’t go to waste (I plan to incorporate it into granola bars!), but it’s not a regular addition for me. Experiment to find your perfect blend!
Ingredients
- 1/3 cup boiling water (optional, for soaking millet)
- 1/2 cup (102g) whole millet
- 2 cups (204g) rolled oats (not instant)
- 3/4 cup (48g) unsweetened coconut flakes
- 1/2 cup sunflower seeds (Note: I have not used sunflower seeds in this version yet)
- 3/4 cup mixed chopped nuts (I typically use 1 1/4 cups (128g) sliced almonds, omitting sunflower seeds and other mixed nuts)
- 1/2 cup pure maple syrup
- 3 Tbsp olive oil (I now often prefer grapeseed oil or canola oil for a more neutral flavor that lets the other ingredients shine)
- 1 tsp sea salt
Optional Add-ins for customization:
- 2/3 cup unsweetened dried cranberries (If unsweetened are unavailable, a small handful of sweetened ones can be used sparingly)
- 1/2 cup mixed assorted dried fruit, chopped (e.g., 1 cup dried apples for a softer texture)
- 1/2 cup puffed millet (puffed quinoa also works beautifully for a light crispness)
Instructions
- Preheat your oven to 325ºF (160ºC). For a more even and gentle bake, I now often recommend preheating the oven to 300ºF (150ºC) and extending the baking time slightly to about 40 minutes, or until the muesli is beautifully golden. This lower temperature helps to prevent burning and ensures a uniformly crisp texture.
- Optional Millet Soaking: In a small bowl, pour boiling water over the millet. Cover the bowl with a plate and let it sit for 30 minutes. (Note: Through my experience, I’ve found this step isn’t strictly necessary anymore as millet bakes well directly in the mixture, so feel free to skip it for a quicker prep).
- In a large mixing bowl, combine the drained millet (if soaked), oats, coconut flakes, sunflower seeds (if using), and your chosen chopped nuts. Pour in the maple syrup, olive oil (or preferred neutral oil), and sea salt. Stir everything thoroughly until all the ingredients are evenly coated.
- Line a large baking sheet with parchment paper. Spread the muesli mixture out in a single, even layer on the prepared baking sheet. Place it in the preheated oven and bake, stirring gently every 10-15 minutes or so, until the mixture achieves a light golden brown color and is wonderfully toasted. This typically takes about 20-30 minutes at 325ºF, or approximately 40 minutes at 300ºF. I usually begin stirring after the first 20 minutes and then continue every 10 minutes until done.
- Once baked, remove the muesli from the oven and allow it to cool completely on the baking sheet. As it cools, it will crisp up further. After cooling, you can stir in any optional additions like dried fruit and puffed millet, if desired. Transfer the finished muesli to an airtight glass container and store it at room temperature for up to 2 weeks, maintaining its freshness and crunch.

Ingredients
- 1 cup rolled oats (I used quick oats for a smoother texture)
- 1/2 cup creamy peanut butter (I opted for cashew butter for a slightly different flavor profile)
- 1/3 cup honey (or maple syrup for a vegan option)
- 1 cup coconut flakes (I used unsweetened shredded coconut)
- 1/2 cup ground flaxseed (Whole chia seeds can be used as a convenient substitute, no grinding required!)
- 1/2 cup mini chocolate chips (or finely chopped dark chocolate)
- 1 tsp vanilla extract
- A pinch of sea salt (approximately 1/2 to 1 teaspoon, to enhance flavors)
Instructions
In a medium-sized mixing bowl, combine all the listed ingredients: oats, peanut butter (or cashew butter), honey, coconut flakes, ground flaxseed (or chia seeds), mini chocolate chips, vanilla extract, and sea salt. Mix everything thoroughly until all components are well incorporated and the mixture forms a cohesive dough. Once mixed, cover the bowl and let it chill in the refrigerator for at least half an hour.
