An effortlessly simple way to elevate these rolls, making them even more celebratory, is to brush them generously with an aromatic herby, garlicky butter as soon as they emerge from the oven. For an extra special touch, adding crushed red pepper flakes to the butter creates beautiful specks of red and green, making the buns look especially Christmas-y and inviting. These brioche dinner rolls, with their rich, tender crumb, are the star of the show.

The recipe for these particular brioche dinner rolls (detailed below) is actually adapted from my popular brioche hamburger buns, simply shaped into a convenient pull-apart form. If you choose to portion the dough into 12 large balls, as depicted in the image below, the resulting rolls will be quite substantial. This size is absolutely perfect for those coveted leftover ham sandwiches, providing a generous foundation for your festive fillings – delightful decisions, indeed! Just be mindful if serving alongside many other rich dishes. For smaller, more delicate rolls, simply divide the dough into 16 portions instead. The garlicky herb butter adds an incredible layer of flavor and aroma that truly distinguishes these rolls, making them a memorable part of any holiday meal.

Description

If you have Bread Toast Crumbs, this recipe is essentially two-thirds of the light brioche recipe found in the book, with a slightly reduced sugar content for a perfect balance. To create an ideal warm environment for your dough to rise, turn your oven on for precisely one minute, then immediately switch it off. This brief burst of heat will create a cozy spot that encourages optimal rising. For the most accurate and consistent results in your baking, it is always recommended to use a digital scale to weigh your ingredients.

Water Note: Some bakers find this dough to be quite wet and potentially challenging to work with. If you reside in a particularly humid climate, consider reducing the initial amount of water. If you are measuring by volume, hold back 1/3 cup of water; if using a scale, reserve 75g. You can always gradually incorporate more water during the mixing process if the dough appears too dry.

Active Dry Yeast Instructions: If you are using active dry yeast instead of instant yeast, begin by whisking the egg with the cold water. Then, add the warmed milk-butter mixture to this combination, ensuring the overall temperature is lukewarm. Sprinkle the active dry yeast over the surface of this liquid and let it stand for about 15 minutes, or until a foamy layer forms, indicating the yeast is active. Once foamy, you can proceed with the rest of the recipe as directed.


Ingredients

  • 4 cups (512 g) all-purpose or bread flour
  • 2 teaspoons (10 g) kosher salt
  • 2 teaspoons (8 g) instant yeast, see notes above if using active dry yeast
  • 2 tablespoons (28 g) sugar
  • 1 1/3 cups (300 g) cold water, or less, see notes above
  • 1 egg
  • 1/3 cup (78 g) milk
  • 4 tablespoons (57 g) butter
  • for the egg wash: 1 egg beaten with 1 tablespoon water

For the garlic-herb butter:

  • 2 tablespoons butter
  • 1 tablespoon minced garlic
  • 1/4 cup finely chopped chives
  • 1/4 –1/2 teaspoon crushed red pepper flakes, optional
  • pinch sea salt, optional

Instructions

  1. In a large bowl, thoroughly whisk together the flour, kosher salt, instant yeast, and sugar.
  2. In a separate medium bowl, whisk together the cold water and the single egg until well combined.
  3. Gently heat the milk and butter together in a small saucepan until the butter is completely melted. Pour this warm mixture into the cold water-egg mixture. The combined liquids should now be perfectly lukewarm. Add this liquid mixture to the dry ingredients in the flour bowl and stir everything together with a spatula until a sticky dough ball forms. Drizzle a teaspoon or two of olive oil over the surface of the dough and gently rub to coat; this important step helps prevent a crust from forming on the dough during its rising period.
  4. Cover the bowl tightly with plastic wrap or a clean kitchen towel and let the dough rise in a warm area (refer to the notes above for creating an ideal warm spot) for 2 to 3 hours, or until it has visibly doubled in size. Alternatively, for a slower, more flavorful rise, you can place the covered bowl directly into the fridge immediately after mixing and let it rise overnight, or for a period of 12 to 18 hours. While the dough is rising, generously grease a 9×13-inch baking pan with butter or a nonstick cooking spray.
  5. Lightly flour your work surface. Gently deflate the risen dough, turn it out onto the floured surface, and knead it briefly for a minute or two. Divide the dough into 12 equal portions. For perfectly even rolls, use a digital scale to weigh each portion to approximately 85g. Note: Dividing into 12 portions will result in quite large, substantial rolls. If you prefer smaller rolls suitable for more delicate servings, divide the dough into 16 equal portions instead.
  6. Using additional flour as needed to prevent sticking, roll each dough portion into a smooth, round ball. Arrange these dough balls in your prepared 9×13-inch pan. (Important Note: If you refrigerated your dough, you can proceed with shaping and deflating it immediately upon removing it from the fridge; there is no need to wait for it to come to room temperature first.)
  7. Cover the pan again and let the rolls rise in a warm spot until they appear visibly puffed and feel light to the touch, typically about 30 to 45 minutes. During the last 15 minutes of this second rise, preheat your oven to 425°F (220°C).
  8. Once the rolls are adequately risen, brush them evenly with the prepared egg wash (1 egg beaten with 1 tablespoon of water) for a beautiful golden crust. Bake in the preheated oven for 18 to 20 minutes, or until the rolls are gloriously golden brown all around and baked through.
  9. Meanwhile, prepare the garlic-herb butter. In a small skillet, melt the 2 tablespoons of butter over low heat. Add the minced garlic and cook gently for 3 to 5 minutes, just until the garlic softens and becomes fragrant but does not brown. Remove the pan from the heat. When the baked rolls are removed from the oven, return the skillet to low heat, add the finely chopped chives and the optional crushed red pepper flakes. Cook for another minute or so, just until the herbs begin to sizzle and release their aroma. Immediately brush the warm, golden rolls generously with this fragrant garlicky herbed butter.
