If you’re using a different type of vinegar—especially one less sweet than white balsamic (like traditional sherry vinegar)—I recommend starting with 1/4 cup and gradually adding more to taste, one tablespoon at a time, towards the end of cooking.

Regarding crushed tomatoes: For the purest flavor, I swear by the Pomi brand (finely chopped tomatoes work too, if crushed isn’t available). However, any high-quality crushed tomatoes will work well. Just aim for a brand that avoids additional seasonings, allowing the natural tomato essence to truly shine.


Ingredients

  • 1 1/4 cups French green lentils (rinse thoroughly before use for best results)
  • 12 oz crushed tomatoes — I recommend Pomi brand for pure flavor (about 1 1/2 cups), see notes above
  • 2 large onions, finely chopped (yielding approximately one quart of diced onions)
  • 2 cloves garlic, minced (or more, to your preference for a richer garlic flavor)
  • 1 bay leaf (essential for traditional depth of flavor)
  • ½ cup white balsamic vinegar, or sherry vinegar (adjust to taste and type, see notes above)
  • ½ cup extra-virgin olive oil (for richness, mouthfeel, and healthy fats)
  • 1 teaspoon kosher salt, plus additional to taste (season generously, as lentils absorb salt)
  • ½ teaspoon fresh thyme leaves, chopped, or a few whole sprigs for easy removal (fresh is best, but dried can substitute)
  • 3 medium carrots, peeled and diced (approximately 1 to 2 cups)
  • 3 celery stalks, diced (approximately 1 to 2 cups)
  • Crushed red pepper flakes, to taste (for a subtle hint of warmth and spice, optional)
  • Freshly cracked black pepper, to taste (for serving and seasoning throughout)

 


Instructions

  1. Combine all ingredients (rinsed lentils, crushed tomatoes, chopped onions, minced garlic, bay leaf, vinegar, olive oil, initial kosher salt, thyme, diced carrots, diced celery, red pepper flakes, and black pepper) in a large, heavy-bottomed pot. Add 1½ quarts plus one cup of water (totaling seven cups of water). Stir well to ensure everything is evenly distributed and submerged.
  2. Bring the mixture to a rolling boil over medium-high heat. Once the soup is actively boiling, reduce the heat to a gentle simmer. Cook uncovered for one hour, stirring occasionally to prevent sticking at the bottom and to ensure all ingredients cook evenly and flavors meld together.
  3. After one hour of simmering, taste the soup. This is your crucial chance to adjust the seasonings! I almost always find myself adding another teaspoon of kosher salt at this stage, sometimes even more, as the lentils and vegetables absorb the salt during cooking and the flavors deepen. Adjust to your personal preference for salt and tanginess.
  4. Carefully extract and discard the bay leaf and any whole thyme sprigs, if you opted to use them. These have already imparted their flavor to the soup.
  5. Serve the hot lentil soup immediately, ideally with a side of crusty homemade bread or the suggested mini loaves (concept described below), and a generous grinding of fresh cracked black pepper on top for an extra aromatic kick. Enjoy your wholesome, flavorful, and incredibly comforting meal!

Notes

This soup truly benefits from sitting overnight. On day two, much of the liquid will have been absorbed by the lentils and vegetables, resulting in a wonderfully thicker, more concentrated consistency. Simply add a little more water or vegetable broth to the pot as you reheat it, stirring until it reaches your desired consistency. Don’t forget to adjust the seasoning again as necessary – a pinch more salt or even a splash of vinegar usually does the trick to bring the flavors back to life.

For larger gatherings or efficient meal prep, this recipe doubles beautifully without any issues. When making a double batch, I often streamline the vegetable preparation by using 2 quarts of diced onions, 1 quart of diced carrots, 1 quart of diced celery, and a whole head of minced garlic.
