Homemade Rhubarb Schnapps: Capture Spring’s Zest in a Bottle

As the days lengthen and the garden awakens, few herald the arrival of spring quite like the vibrant stalks of rhubarb. For many, this seasonal delight conjures images of pies, crumbles, and cakes. However, there’s a truly magical way to preserve its unique tartness and beautiful color far beyond its fleeting season: homemade rhubarb schnapps. This simple, three-ingredient DIY liqueur is not just a drink; it’s a celebration of spring, a testament to the joy of homemade creations, and a refreshingly delightful addition to any bar cart.

In past years, it felt like rhubarb season blinked and was gone. But recently, we’ve been blessed with an extended harvest, with an abundance of rosy stalks still gracing the shelves of our local co-op. While I’m always eager to bake my favorite rhubarb cake (recipe coming soon!), my heart truly sings for rhubarb schnapps. Poured over ice, topped with a splash of seltzer, and finished with a squeeze of fresh lime, it transforms into an incredibly refreshing cocktail, a taste of heaven on a warm afternoon.

Having embarked on my third batch this season, I’ve refined the process and gathered some invaluable insights to ensure your homemade schnapps is nothing short of perfect. This guide will walk you through everything you need to know, from selecting the best rhubarb to bottling your beautiful creation.

Why Homemade Rhubarb Schnapps is a Must-Try

There’s an undeniable charm to crafting your own liqueurs. Beyond the simple satisfaction of a DIY project, homemade rhubarb schnapps offers several compelling advantages:

  • Unmatched Freshness and Flavor: You control every ingredient, ensuring only the freshest rhubarb, high-quality sugar, and your preferred vodka go into the mix. This translates to a superior flavor profile that store-bought options simply can’t match.
  • Stunning Visual Appeal: The natural pink and red hues of rhubarb beautifully infuse the vodka, creating a vibrant, eye-catching liqueur that’s as pleasing to the eye as it is to the palate. It’s truly a feast for the senses.
  • A Thoughtful and Unique Gift: Bottled in elegant jars, homemade rhubarb schnapps makes an incredibly personal and impressive gift. Friends and family will be delighted by this handcrafted token, especially when paired with a simple serving suggestion card.
  • Surprisingly Easy Process: Despite its sophisticated outcome, making rhubarb schnapps requires minimal effort. With just about 5 minutes of hands-on time, you can set the infusion process in motion and let time work its magic.
  • Capturing the Season: It’s a wonderful way to extend the enjoyment of rhubarb beyond its harvest. You can savor the taste of spring well into summer and even autumn.

Optimizing Your Rhubarb Schnapps: Key Learnings and Tips

Through trial and error, I’ve discovered a few tricks that make all the difference:

  1. Brewing Time Perfection: While some original recipes suggest a 6-week infusion period, I’ve found that 3 to 4 weeks is often ideal for the flavors to meld beautifully and the color to fully develop. After this time, your schnapps should be ready to be strained and bottled. Feel free to taste-test along the way!
  2. The Best Bottles for Storage: For both aesthetics and practicality, I highly recommend using grolsch-style swing-top bottles. Their airtight seal ensures freshness, and their classic design makes them perfect for gifting.
  3. Achieving the Perfect Pink Hue: This is crucial! If, after a few days, you notice the schnapps’ color is barely pink, don’t despair. The key is the rhubarb itself. Go find more rhubarb, specifically stalks with the brightest, most vibrant pink or red color. Chop them up and add them to your infusion. This simple step worked like a charm for my most recent batch, dramatically enhancing the color. Pro Tip: To avoid this extra step, always start with the pinkest rhubarb stalks you can find.
  4. Embrace the Double Batch: Given how easy and rewarding this recipe is, you may as well make a double or even a near-double batch (see specific proportions in the recipe card below). It requires only a minimal increase in effort but yields significantly more of this delightful liqueur, ensuring you have enough for personal enjoyment and thoughtful gifts.
  5. A Gift from the Heart: The striking hue and unique flavor of rhubarb schnapps make it a truly beautiful and much-appreciated homemade gift. Bottle it elegantly, perhaps with a custom label and a serving suggestion, and you’re sure to impress.

My first foray into making this schnapps, a fantastic Nigella Lawson recipe, was in June four years ago. Even then, it felt late for rhubarb season, which seems to extend further and further each year. While I ponder the ecological implications, I certainly can’t complain about extended access to such a versatile ingredient! I sincerely hope you also have access to fresh rhubarb and take the opportunity to try this incredible recipe.

Description

This delightful rhubarb schnapps recipe is adapted from Nigella Lawson’s How to Be a Domestic Goddess. It’s incredibly easy to make and yields a beautiful, vibrant pink liqueur that’s perfect for sipping or sharing.

A recent double batch filled 4 of these elegant swing-top bottles, making them ideal gifts. People are always thrilled to receive this homemade treat!

Here are the suggested proportions for a convenient near-double batch:

  • 3+ lbs. rhubarb (to yield about 2.25 lbs. once trimmed and chopped)
  • 2.5 cups granulated sugar
  • 1.75 L bottle vodka

Important Note on Color: When I made a batch recently, I noticed after a few days that while the rhubarb itself had given up its color, the schnapps wasn’t as vibrantly pink as I’d hoped. This was because I had started with rhubarb that wasn’t very pink to begin with. The solution? I bought more rhubarb – specifically the brightest pink stalks I could find – chopped them up, and added them to the infusing jar. It worked like a charm, enhancing the color beautifully. Therefore, always try to start with the pinkest rhubarb stalks you can find to ensure a gorgeous final hue.

Ingredients (Single Batch)

  • 2 lbs. rhubarb* (aim for about 1 1/4 lbs. once cleaned and trimmed)
  • 1 1/2 cups granulated sugar
  • 1 liter vodka (a mid-range vodka is perfectly fine; no need for top-shelf)

* For the most beautiful pink color, seek out rhubarb stalks that are vibrantly pink or red. Refer to the notes above for tips on enhancing color or making a double recipe.

Instructions

  1. Prepare and Combine: Wash and chop the rhubarb into 1/2 to 1-inch pieces. Place the chopped rhubarb into a large, sealable glass jar (a Mason jar works perfectly). Add the granulated sugar, then seal the jar and give it a good shake to distribute the sugar evenly. Finally, pour in the entire bottle of vodka.
  2. Infuse: Secure the lid tightly and place the jar in a cool, dark place. Allow the mixture to infuse for 3 to 4 weeks. For optimal flavor and color extraction, try to shake the jar gently every few days, if you remember. The schnapps can continue to infuse for up to 6 months, deepening in flavor, but 3-4 weeks is often sufficient.
  3. Strain and Bottle: Once infused to your liking, strain the schnapps through a fine-mesh sieve lined with cheesecloth into a clean pitcher. Discard the rhubarb solids. Pour the strained rhubarb schnapps into clean bottles, such as swing-top bottles, and seal them.

Serving Your Homemade Rhubarb Schnapps

Once bottled, your rhubarb schnapps is ready to be enjoyed in countless ways. Its vibrant flavor makes it incredibly versatile:

  • Classic Rhubarb Spritzer: Pour 2-3 ounces of schnapps over ice, top with seltzer or sparkling water, and garnish with a fresh lime wedge. It’s light, refreshing, and perfectly balanced.
  • Sparkling Rhubarb Cocktail: For a more festive touch, mix the schnapps with chilled Prosecco or Champagne. A few fresh raspberries or a mint sprig make a beautiful garnish.
  • Rhubarb Rosé: Combine schnapps with a dry rosé wine and a splash of soda water for an elegant and easy summer drink.
  • Beyond Drinks: Drizzle a small amount over vanilla ice cream, fresh berries, or a fruit salad for an adult dessert twist. It can also be incorporated into glazes for roasted meats for a unique sweet and sour note.

Storage and Shelf Life

Thanks to its alcohol content, homemade rhubarb schnapps has an excellent shelf life. Stored in tightly sealed bottles in a cool, dark place, it can easily keep for several months, if not longer. While the color may slightly deepen over time, the flavor generally remains robust and delicious. It’s truly a gift that keeps on giving!
