Important Note: In the accompanying video, I prepare a half recipe but use 2 tablespoons of soy sauce instead of the proportional 1.5 tablespoons. Some individuals have found this to make the broth quite salty. If you’re halving the recipe, I recommend starting with 1.5 tablespoons of soy sauce and adjusting with more salt to taste as needed.

- 80 g (6 tbsp) unsalted butter, cubed, or to taste (a generous knob per bowl is perfect)

- Sea salt and freshly cracked black pepper, to taste (use a generous amount of pepper)
- Sambal Oelek or other chili paste of choice, optional, for serving
