For the Topping (for one 8-10 inch pizza):
- 6 thin lemon slices (as thin as possible, ideally unwaxed and organic)
- 3 ounces smoked fresh mozzarella, thinly sliced or torn into small pieces
- 5 large leaves fresh basil, gently torn or left whole
- extra-virgin olive oil for drizzling (a good quality, fruity olive oil is recommended)

- 7 1/2 cups all-purpose flour (1000 grams), plus more for shaping dough (Tipo 00 flour can also be used for an even finer crust)
- 4 teaspoons fine sea salt
- 1/2 teaspoon active dry yeast
- 3 cups warm water (approximately 70-75°F / 21-24°C)
Instructions
- Prepare the Dough (18 Hours Ahead): In a large mixing bowl, whisk together the flour, fine sea salt, and active dry yeast until thoroughly combined. While continuously stirring with a sturdy wooden spoon, gradually add 3 cups of warm water. Continue to stir until all the flour is well incorporated and no dry streaks remain. Using your hands, gently mix and bring the dough together to form a rough, shaggy ball. Transfer this dough to a clean, generously sized bowl. Cover the bowl tightly with plastic wrap to create an airtight seal. Let the dough rise at room temperature (ideally around 72°F or 22°C) in a draft-free area for approximately 18 hours. During this long fermentation, the surface of the dough should become covered with tiny bubbles, and the dough itself should more than double in size, indicating it’s ready.
- Shape the Dough Balls: After the long rise, gently transfer the dough onto a lightly floured work surface. Avoid over-handling at this stage to preserve the air bubbles. Gently shape the dough into a rough rectangle. Divide the entire mass into 6 equal portions. Working with one portion at a time, take the four corners and gather them towards the center, creating four distinct folds. Flip the dough ball seam-side down and gently mold it into a smooth, round ball. Lightly dust the shaped dough ball with flour and place it aside on your floured work surface or a floured baking sheet. Repeat this process for the remaining 5 portions of dough.
- Second Rise & Storage: Allow the newly shaped dough balls to rest, covered loosely with plastic wrap or a slightly damp kitchen towel, for about 1 hour. They should become visibly softer and more pliable.
To Make the Pizzas:
DO AHEAD OPTION: These dough balls can be prepared up to 3 days in advance. Simply wrap each individual dough ball tightly in plastic wrap and chill them in the refrigerator. When you’re ready to make pizza, unwrap the chilled dough balls and let them rest at room temperature on a lightly floured work surface, covered with plastic wrap, for 2–3 hours before attempting to shape them. This allows the dough to warm up and become more elastic.
- Preheat Your Oven: During the final hour of the dough’s resting period, begin preparing your oven. If you are using a pizza stone, place it on a rack in the upper third of your oven. Preheat the oven to its hottest possible setting, typically between 500°F and 550°F (260°C to 290°C), for at least 1 hour to ensure the stone is thoroughly heated. If you are using a standard baking sheet, arrange a rack in the middle of the oven and preheat it to its hottest setting (500°F–550°F). There’s no need to preheat the baking sheet itself.
- Prepare Lemons & Dough: As the oven preheats, take one dough ball and generously dust it with flour, placing it on a floured work surface. Simultaneously, submerge the thin lemon slices in a bowl of water for 15 minutes. This helps to reduce their initial bitterness and makes them slightly more tender during baking. After soaking, thoroughly pat the lemon slices dry with paper towels to remove excess moisture.
- Assemble and Bake the Pizza: Place one floured dough ball onto a rimmed baking sheet. Using your fingers, gently stretch and press the dough until it forms a circle approximately 8 to 10 inches in diameter, leaving a small 1-inch rim around the edges for the crust. Distribute the 3 ounces of thinly sliced or torn smoked mozzarella evenly over the stretched dough, again, leaving the rim uncovered. Artfully arrange the 6 dried lemon slices over the cheese. Carefully tuck in the 5 large fresh basil leaves amongst the cheese and lemon. Drizzle everything, including the dough rim, lightly with extra-virgin olive oil. Carefully transfer the baking sheet to the highest rack in your preheated oven (or directly onto the pizza stone). Bake until the crust is visibly puffy, golden brown, and the cheese is melted and bubbling, which typically takes about 6 minutes. For an extra crispy and slightly charred crust, you can then turn on the broiler for an additional 30-60 seconds, watching carefully to prevent burning. (Note: I personally often skip the broiling step to maintain the delicate flavors.) Remove the pizza from the oven and serve immediately. Repeat the process with the remaining dough balls and toppings.
